Herbal Blended Lemonade
This blended lemonade is a refreshing combination of mint, basil and cilantro with ice and lemonade. It's perfect when you need an afternoon boost! Made with simple, natural ingredients, the lemonade is the star here. I hope you enjoy it!
Hello! Happy last week of August :) Doesn't it feel like this is the last week of summer, in a way? I'm not quite ready to say goodbye yet, so let's all keep the summery vibes going for at least a little while longer. I know I'll be drinking this herbal lemonade as an afternoon treat. It's so bright, tangy, sweet and herbaceous that I think you'll love it too!
I made this recipe using the lemonade concentrate by Lighthouse Lemonade, which is made from only natural ingredients using a century-old Maritime recipe. When they asked me to create a recipe for them using their concentrate, I did a little exploring around their super cute website and was totally taken by their ties to the East coast, the packaging, and the stories. They call it "Summer in a bottle" and I couldn't agree more - drinking lemonade reminds me of the lemonade stands we'd make as kids in the middle of the summer break. Each bottle of concentrate makes 7 litres of lemonade, but you can also use the concentrate in lots of other ways. I initially wanted to try it as a glaze for a lemon and berry cake. I was also thinking it would be so good blended with a bit of water and then combined with whole berries and frozen into popsicles. I ended up with this blended herbal version though, because the combination of herbs and citrus is so fresh and delightful, and such a favourite of mine. It's also so easy, and doesn't mean turning on the oven or waiting several hours for something to freeze. They also have a lime cordial version, which I bet would be amazing in a cocktail!
How are you guys riding out the last bit of summer? Last night I did paddle board yoga with friends from work and we're hoping to go a few more times before the season shifts into Fall. It was crazy hard to stay balanced and even though I've been doing yoga for 10 years, I felt really wobbly on the board. I didn't fall in though! We were in Niagara on the Lake, and it was funny because as we went through our class we noticed some tourists following along on the shore. So fun. Already I can't wait to go again! BBQ parties and fireworks are also on the calendar this week :) I hope your schedules are full of summery fun too! Talk soon xo
Herbal Blended Lemonade
Recipe makes 3 large or 4 small servings
1 packed cup fresh basil
1 packed cup fresh mint
1/2 packed cup cilantro (you can replace this with extra basil and mint if you prefer)
1 cup water
1/2 cup lemonade concentrate, plus more to your preferred sweetness
4 cups ice
Combine the herbs, water, and lemonade concentrate in a blender and blended until smooth. Add the ice and blend briefly on high so the ice is crushed and no large pieces remain. Pour into glasses and serve immediately.
