No-Bake Trail Mix Popcorn Clusters

I have an easy to throw together treat for you that's totally adaptable and low-key. As always, free from gluten and dairy, these no-bake clusters are a mix of all the trail mix favourites and popcorn and they set up in about 20 minutes in the freezer. Quick and easy, just as summer treats should be!

Hi guys! I don't want to jinx myself or anything, but this recipe is coming only 1 week after my last one and I may be getting back into a more consistent groove around here. That's the goal anyways. I am excited to share this easy-peasy recipe with you today. Not only is it quick, it also ticks of many of those special diet-friendly treat boxes: crunchy, sweet, portable, gluten free, vegan, low-sugar. They're also incredibly customizable - don't want to include nuts? Just replace them with extra oats or seeds! Grain-free? Just swap out the oats and popcorn for extra coconut flakes, nuts, and seeds. Don't have cacao nibs? Try chocolate chips, or just skip them. Seriously, just take a peek in your pantry and go with what you have :)

I use a mixture of coconut oil and brown rice syrup, and then just add a touch more sweetness with liquid stevia. The combination makes these hold together well, and provides enough sweetness without being cloying. I love adding goji berries wherever I can, but more raisins or dried cranberries are a good sub. 

Once these set up in the freezer, you can move them to the fridge for storage. They'll be fine for about an hour at room temperature too. I've been snacking on these after dinner lately, and highly recommend them as a nice little treat for these warm summer nights.

No-Bake Trail Mix Popcorn Clusters

Note: When choosing popcorn, try to find one that is non-GMO since corn is one of the most genetically modified crops. You can mix up the trail mix ingredients as much as you like based on your tastes and what you have available.

Makes 24 clusters

1 cup popcorn (such as SkinnyPop, or other non-gmo brand)

1/2 cup oats (gluten free if needed)

1 cup total of mixed nuts, seeds, raisins, dried cranberries, cacao nibs, coconut flakes, goji berries

6 tablespoons coconut oil

6 tablespoons brown rice syrup

1 tablespoon lucuma powder (optional, but adds a caramel-like flavour)

1/4 teaspoon sea salt

1/2 teaspoon vanilla

4 drops liquid stevia

Line cutting board with parchment paper and make enough room in your freezer to accommodate it. 

Add the popcorn, oats, and trail mix ingredients in a large bowl, and toss to mix. 

Set a small pan over medium heat and stir the coconut oil, brown rice syrup, lucuma powder, sea salt and vanilla together. Continue to stir as the coconut oil melts. Bring to a simmer and allow the mixture to simmer for 1 full minute. Stir in the stevia. Remove from heat and pour over the dry mixture. Use a spatula to mix, ensuring that everything is evenly coated in the syrup mix. 

Use a tablespoon-sized measuring spoon and scoop out heaped tablespoons of the mixture. Place on the prepared parchment-lined board. When all the mixture has been portioned out, transfer to the freezer to set for 20 minutes. 

Set clusters can be stored in a covered container in the fridge, and will keep for 3 days. The clusters are best from the fridge, but can stay at room temperature for about an hour without becoming too soft. Enjoy!
