Parsley & Pepita Falafel Salad with Garlic Tahini Dressing

You might already suspect this, but I love a good salad. A mix of raw and cooked parts takes a lunch-time staple to a dinner-worthy meal. I hope you enjoy this one as much as I do!

These little falafels are packed with some extra green goodies - hello, parsley - a bit of healthy fat - that's you, pepita! - and lots of flavour. I've played around a little with these and personally, I enjoy them best when the chickpeas are ground smooth with the other ingredients. I like how they stick together and prefer the texture. If you like your falafel on the chunkier side, feel free to grind them a little bit less. They'll still be good! The falafel in these photos is more on the textured side, just as a reference.

Lately, I've been craving lots of vegetables. I almost want to do a full-blown juice cleanse, but I am teetering on the border of sick/overtired (still) and I don't think I have the energy for it. Instead, I'm just trying to load up on vegetables and cut down on sweets (even the healthy, homemade versions). This salad fits nicely into my plan. Things are just short and sweet here today! Let me know what you think if you try it - if you're not up for a salad, try these in a wrap or cabbage leaves (so messy and good!)

Parsley & Pepita Falafel Salad with Garlic Tahini Dressing

Makes one large salad to serve two for dinner. The falafel recipe yields 9-10 falafel, and can easily be doubled.

For the falafel:

1 c chickpeas, cooked

1/4 c parsley, packed

1/4 c pepitas (pumpkin seeds)

1 tbsp chickpea flour

1 tbsp green onion, finely sliced

1 tsp ground cumin

1/4 tsp smoked paprika

1/4 tsp sea salt

1/4 tsp ground coriander

1 garlic clove, chopped

Preheat the oven to 400 degrees Fahrenheit.

Add the chickpeas to the bowl of a food processor, fitted with an s-blade. Pulse to breakdown well. Add all the remaining ingredients, and pulse again - I prefer these when the batter is almost completely smooth, but you can leave some texture if you like. Roll into tablespoon-sized balls - you should have 9 or 10.

Bake on a parchment-lined sheet for 18-20 minutes, turning halfway through so that the falafels brown evenly. 

For the dressing:

1 garlic clove, finely minced

2 tbsp tahini

2 tbsp lemon juice

1 tbsp olive oil

1 tbsp warm water

a pinch of sea salt

Place finely minced garlic in the bottom of a small bowl. Add the tahini and stir together. Whisk in the lemon juice, warm water and salt. Whisk in the olive oil until smooth. 

For the salad:

1 large or 2 small romaine hearts, chopped into bite-sized pieces 

1 small red pepper, chopped

1 small tomato, chopped

1/2 c purple cabbage, finely sliced

1/2 c chickpeas, cooked

1 green onion, finely sliced

1/2 c cucumber, sliced into half moons

1 small carrot, shaved into ribbons using a vegetable peeler

1/4 c curly parsley, roughly chopped

hot sauce, lemon wedges and hummus, to serve (optional)

On a platter, place the prepared lettuce. Top with chopped tomatoes and peppers, cucumber moons, shaved carrot ribbons, red cabbage, and curly parsley. Sprinkle scallions over top. Add falafels, and drizzle with dressing. If you want to make this a bit heartier, add a dollop of hummus. Serve with a wedge of lemon and hot sauce and enjoy!
