Vanilla & Balsamic Strawberry Tarts

Strawberries are glorious during the summer, when they are sold at farmer's markets and roadside stands for your enjoyment only hours since being plucked from the earth. These small yet juicy, ripe, ruby-red berries epitomize summer and are reason to pause and wonder why one would ever settle for those mid-winter giants, so lacking in taste. Perfect enjoyed on their own, yet elevated when combined with a few simple ingredients into a darling little tart. I've delighted in sharing these sweet desserts with company twice in the last week.

Perfect enjoyed on their own, yet elevated when combined with a few simple ingredients into a darling little tart. I've delighted in sharing these sweet desserts with company twice in the last week.

Deceptively simple, which is perfect when you have a list of things to tidy and arrange before your doorbell chimes ... these can be ready, start to finish, in ten short minutes. 
 
Almost raw, and completely vegan and gluten free, these will delight those with several culinary needs and preferences. Pecans can simply be interchanged for sunflower seeds to ensure that those who avoid nuts are satisfied too. You could change this up, increasing the protein content,  by mixing some soaked gogi berries in with the strawberries. If another summer berry or fruit is calling out to you, substitute it for the strawberries (I imagine ripe peaches would do beautifully here, maybe switching out the dark balsamic for a white variety instead). Celebrate summer's bounty!

Vanilla & Balsamic Strawberry Tarts (gluten free, vegan, almost raw, nut-free option) 

Makes 4, 4" tarts, multiply recipe as needed. This recipe requires a food processor (one of the most-used kitchen appliances in my home), and tart molds with removable bottoms. If you do not have these molds, you can use muffin liners (and a muffin tin, for structure) and make 8-10 small tarts instead. 

For filling:

1/4 c strawberries + 1/2 c sliced strawberries

1/2 tsp balsamic vinegar

small squeeze of lemon juice

1-2 tsp maple syrup, depending on sweetness of berries

1/4 tsp vanilla extract 

1/2 tbsp white chia seeds

For crust:

1 c raw pecan halves

10 medjool dates, pitted

1/2 tsp vanilla extract

a generous pinch of sea salt

To serve:

extra sliced strawberries

red currants (optional)

Begin by mashing 1/4 c strawberries in a small bowl. Add balsamic vinegar, a small squeeze of lemon juice, vanilla extract, and maple syrup; stir to combine. Mix in chia seeds and set aside as you prepare remaining components. As this mixture sits, the chia seeds will absorb the liquid and will create a jam-like sauce. This should sit for about 10 minutes, minimum.

In a small food processor, pulse the pecans with dates, vanilla, and sea salt until incorporated and only small pieces of nut and date remain. Divide mixture by four, and press firmly into each tart shell. Place in the freezer to set for a few minutes. 

Gently toss the remaining 1/2 cup of sliced strawberries with the strawberry sauce mixture, until well-coated.

When ready to serve, remove tart shells from freezer and carefully press through mold to remove. Divide strawberry mixture among shells, and top each with extra sliced strawberries and red currants, if using.
