Happiest Thanksgiving wishes! We've had an extra day off this weekend to celebrate Canadian Thanksgiving, and our Monday has been extra cozy - leftovers from yesterday's dinner with family, a Netflix marathon of The Walking Dead (so gross and gory but addicting), and these delicious pancakes.

Studded with diced apples that are caramelized with coconut sugar and then a swirl of sweet cinnamon, these breakfast beauties set the mood for a cozy day but would be equally welcome at a festive table. With cooler weather and the holidays approaching, I like to have a few recipes on hand for serving guests or treating ourselves. I hope you love these too!

Our family has a tradition of going to a large arts and crafts festival each year. Officially, the show takes place in the yard of the little town's elementary school but it's gotten so big that every lawn lining each side the main street has tables. As a teenager, it was something I loved to attend with my mom and it used to be just the two of us, wandering around and looking at various paintings, jewellery, knits, garden and door decorations and the like. Even though we hardly ever bring anything home, I still love to go - it feels like part of Thanksgiving to me. This year, Zach and I went to the show and spent a couple hours wandering around. We found a painting that I loved but ... we seem to disagree on what a reasonable price to pay for art is and came home without it, though I kept the artist's card (just in case!). This certainly isn't the first time we haven't seen eye-to-eye on purchases ... I tend to see something I love and decide immediately that I want it, whereas Zach takes his time to consider purchases that are a bit more expensive. I think it's good that he balances me out, but sometimes I wish he would just agree with me! Anyways, in the past few years, a few vendors have began setting up tables of antiques. I love to browse and we found a vintage set of salt and pepper shakers and a rustic silver tray for $6 - quite a steal! You can see my new tray in these photos - pretty, isn't it?

Caramelized Apple & Cinnamon Swirl Pancakes

Makes 9 pancakes. This recipe as written serves 2 hungry people, and can be doubled to serve more. Adapted loosely from my Spiced Pumpkin Pancakes.

1/4 cup oats (certified gluten free)

1/2 cup brown rice flour

1/8 cup light buckwheat flour

1 tbsp tapioca starch or arrowroot starch

1/2 tsp baking soda

1/4 tsp cream of tartar

1/8 tsp sea salt

2 tsp coconut sugar

1/4 tsp ground cardamon 

1/2 cup milk (I used coconut milk)

1/4 cup water

1/2 tsp vanilla extract

2 tsp grapeseed oil

Caramelized Apples

1 small apple, peeled and diced small (1/2 cup)

1/4 tsp coconut oil

1/8 tsp ground cardamon

1/8 tsp ground cinnamon

1/2 tsp coconut sugar

Cinnamon Swirl

2 tsp coconut sugar

1 tsp ground cinnamon

1/2 tsp grapeseed oil

To prepare the caramelized apples, warm coconut oil in a small pan over medium high heat. Add apple, spices and sugar and stir together. Cook for 3-5 minutes, as the apples soften and the sugar caramelized slightly. Set aside.

Stir the Cinnamon Swirl ingredients together, and set aside.

Whisk together the dry ingredients in a medium bowl. Combine the wet ingredients, and stir into the dry being careful not to over-mix. Fold in the caramelized apples, and then add the cinnamon sugar and swirl into the batter with a spoon. 

Heat a large pan over medium heat. Add additional coconut oil, and swirl to melt and coat the pan. Use a ladle to spoon about a quarter cup of batter onto the pan for each pancake. Cook for about 2 minutes, until small bubbles appear. Flip and cook for another 1-2 minutes. Repeat with remaining pancakes.

Serve with real maple syrup and thinly sliced apple.
